WASHED RIND - King River Gold, Milawa, VIC
The King River Gold is a gentle, subtle style of stinky (washed rind) cheese. The rind is a delicate pink-orange colour and has a slight salty crunch to the bite, giving way to the soft, delicious interior. The flavour is rich yet mild with earthy, smoky notes, and a smooth paste that will start to ooze if you leave it out of the fridge for a few hours.
WASHED RIND - Jensens Red, Tarago River, VIC
What an absolute art - like an abstract painter with a brush, this Jensen’s Red is a true skill to master and a creative outlet for our friends at Tarago River. Named after cheesemaker Laurie Jensen and influenced greatly by seasonal milk conditions, it’s nature's wild child. This is a tricky washed rind cheese to craft but when done right, oh my crackers and cheese, it’s a moment! This is one of those moments.
WASHED RIND - Grotto, Apostle Whey, VIC
Grotto starts off as a camembert but is washed daily in a secret recipe brine! That is how the colour develops, a beautiful orange tone! Being a stinky cheese it has the characteristic smell, but don’t be scared, as the saying goes ‘the stinkier, the better’!
NASHUA WASHED RIND - Nimbin Valley Dairy, NSW
Nashua Washed Rind is a washed rind soft cheese crafted from cow milk, similar in shape and size to a camembert, but more bold and brave with it's tasty, yeasty outer! When young, the paste has a chalky texture which matures into a very creamy and soft cheese with a buttery yellow centre.
The Nitty Gritty:
Each cheese weighs approx. 150g-200g. Sometimes we will find a brilliant or rare cheese that weighs less that we just want to showcase to you.
