Tarago Gippsland Blue!
"Delicious, creamy, complex blue cheese"
So we had to share exactly how Tarago River Cheese explains the flavour of their famous Gippsland Blue. Listen to this. It’s deeply complex like a ‘difficult child’ demanding great care and attention to mature. Well sorry to the difficult children out there that had to read that, but can’t you relate? Too funny! This really is the goo-gar of blue cheeses.
Naturally rinded, and deeply fermented, it morphs through great biological changes during its cellaring. One of the world’s great cheeses, evolving with nature as the seasons and milk changes interact with complex micro flora that it attracts during the aging process. Sounds technical, well that’s because it really is. For most though, you probably just want to know that it’s a creamy mix of strong, mature gooey cheese that oozes out of its ripened rind giving you a perfect stinky cheese for spreading on crackers… or spooning straight off the plate. Hey - we’ve all been there!
Who is Tarago River Cheese?
Settled in the Western Port catchment in Gippsland, Tarago River Cheese company uses the seasonal variations in the region to their advantage and continue to follow the time honoured tradition of farmhouse cheesemaking. So what does this mean for all the cheese-lovers out there? You get to discover a bountiful cheese harvest with multiplicity of flavours and textures! Cheese, they wheel-y (we had to) do make miracles!
How does it taste?
While it’s a blue, the Gippsland Blue is a creamier, oozier blue, removing the tangy acidity and crumble you may expect from a blue. Instead you get a strong, mature flavour profile with a creamy, smooth depth.
