Although genetically related to Cabernet Sauvignon, Cabernet Franc has less tannins and is more aromatic giving a gorgeous raspberry and five spice flavour. Just 33 hectares of this grape variety remain in the Barossa, so Jo Irvine has made it her mission to conserve the last remaining vines so that the Barossa maintains a high level of variety.
There is a long history of merlot making in Jo Irvine's family. Her father, James, was known as the "Master Merlot Maker". Jo followed her dad around the winery, helping make his long line of merlots from the young age of seven. A few decades later and this drop is picking up some big awards! The Barossa is known around the world for its outstanding Shiraz. A bit of age and great terroir give rise to the perfect storm in this bottle. 2014 Mosaic Collection Anubis Cabernet Sauvignon
This one has picked up some banging gongs around the world, so let's get it on. Cab Sav is still one of Australia's favourites but when you get someone like Jo Irvine creating it, you'll soon realise you've been doing this drop all wrong. Jo personally selects the fruit from a single vineyard in Eden Valley and then matures it for 24months in French oak before bottling. It will ruin every other Cab Sav for you. But then again, you'll have a new love.
