Why you should order this month’s Therapy Box
This year has been tough for many, especially for our amazing Australian cheesemakers. We thank you Australia, for supporting us from the start of the year with the bushfires and throughout the pandemic. This month features amazing Australian cheese and gives you the opportunity to get yourself some cheese therapy whilst making a huge difference - supporting small Australian cheesemakers! And not only them, but also local communities and dairies that rely on them continuing to make cheese! Again, thank you for your support, we hope you will enjoy this month’s cheese!
This month’s cheese*:
Each pack includes four cheeses made by great Australian, artisan cheesemakers, plus accompanying tasting notes for wine and food pairings.
SOFT - Bloomy, Pecora, NSW
Situated 2 hours south-west of Sydney on the New South Wales South Coast lies a small and young sheep milk dairy founded by Michael and Cressida McNamara. They make produce ewes milk cheese that has gained a lot of attention since they started making in 2011. Bloomy lives up to its name and holds flavours like a bouquet of flowers! It changes its flavour profile on the palate as it ages.
STINKY - Nashua, Nimbin Valley Dairy, NSW
Don’t judge a book by its cover they say and similar applies to stinky cheese! Don’t judge a cheese by its stench! Nashua Washed Rind is one stinky delight that surely showcases this. Being a washed rind soft cheese crafted from cow milk, it’s similar in shape and size to camembert, but more bold and brave with its tasty, yeasty outer.
HARD - Joe Crow, Stone & Crow, VIC
Joe Crow certainly is one of those cheeses that makes you speechless - and amazed! This cheese is quite special when the cheese is made the curd is heated, not pressed! It was Jack’s son who came up with this cool name! It is also his favourite cheese, and we are pretty sure you will say the same once you’ve tried it!
BLUE - Bolte’s Bonanza, VIC
This is a delicious blue that has so many sensations in the texture that you'll be pulling some wow faces when tasting it for the first time! Bolte’s Bonanza is a blue vein that has been matured in wax. It has a smooth texture and then crunchy crystalised blue vein pockets that burst in your mouth - it’s a blissful surprise with every bite!
* Cheeses may change without notice if they become unavailable. In this case, we will substitute with another great cheese.
Blessed are the cheesemakers.
