The Tarago Pack!
"From the depths of the Gippsland catchment"
Next stock expected 24 January & first deliveries from 28 January
We can't go without small Australian cheesemakers like Tarago River Cheese. We love working with our cheesemakers, sharing in their passion and showcasing the artful way they craft their cheese. Tarago is no exception. It's hard to choose only four of the best cheeses when it comes to Tarago, they're all so dreamy but in this pack, we've done our best to bring together what we'd say is four of the 'best cheeses of the season'.
Who is Tarago?
Settled in the Western Port catchment in Gippsland, Tarago River Cheese company uses the seasonal variations in the region to their advantage and continue to follow the time honoured tradition of farmhouse cheesemaking. So what does this mean for all the cheese-lovers out there? You get to discover a bountiful cheese harvest with multiplicity of flavours and textures! Cheese, they wheel-y (we had to) do make miracles!
What are the cheeses*?
Four creamy and oozy cheeses are included in this pack.
BLUE: Gippsland Blue
So we had to share exactly how Tarago River Cheese explains the flavour of their famous Gippsland Blue. Listen to this. It’s deeply complex like a ‘difficult child’ demanding great care and attention to mature. Well sorry to the difficult children out there that had to read that, but can’t you relate? Too funny! This really is the goo-gar of blue cheeses.
BLUE: Shadows of Blue
If cheesemakers had nightmares, Tarago’s Shadows of Blue would be the ultra scary kind because of the difficulty and skill it requires to be made. Oh but those nightmares sure are worth the holy dreams it brings to all the lucky mouths that devour it! It’s a delightfully delicious double cream blue and yes it’s a thing and yes it’s as mind-blowing as you expect it to be. This unique Australian cheese is soft and creamy with a placid P.Roqueforti mould which shares centre stage with a number of wildly delicious yeasts powering their way through the flavour profile.
SOFT: Tarago Triple Cream
Like a hunt for gold, Tarago Triple Cream is a shining star which ages gracefully into a treasure trove of complex flavours. Ah me hearties - you’ve hit the jackpot with this one. The creamy softness simply melts in the mouth. It’s easy to feel that this is a triple cream as it starts to ooze. As the cheese ripens, the softer it will get.
STINKY: Jensens Red
What an absolute art - like an abstract painter with a brush, this Jensen’s Red is a true skill to master and a creative outlet for our friends at Tarago River. Named after cheesemaker Laurie Jensen and influenced greatly by seasonal milk conditions, it’s nature's wild child. This is a tricky washed rind cheese to craft but when done right, oh my crackers and cheese, it’s a moment! This is one of those moments.
