What noise does a cow make, if it's a really happy cow? Well, we'd probably say it would still be a moo, but more of a high pitch, long moo. Although it might just be easier to just ask the happy cows and happy goats at the Nimbin Valley Dairy. It's said these little guys are the happiest on this side of the Capricorn! Before you go and YouTube 'happy goats', stick with us for just a little bit longer. Then do it - it's worth it! Who is Nimbin Valley Dairy?
We all know Nimbin as a NSW hub for impeccable produce and Nimbin Valley Dairy certainly adds to this reputation! Nimbin Valley Dairy is the home of Kerry and Paul Wilson, together with 60 cows and 150 of the happiest free-ranging goats this side of Capricorn. Who doesn't love a happy cow? Inspired by the French and Italian plus a hefty 5 generations behind them, these cheesemakers make the kind of cheese that's stands a testament to the families long standing traditions.

Bringing together a blue, a soft, a stinky and a hard, this pack is a great combination of 4 brilliant cheeses!
Tintenbar Triple Cream
Crafted from cow milk, Tintenbar Triple Cream is a bloomy white mould cheese that's been made even more delightful with the addition of fresh cream. When young the paste has a chalky texture which matures into a very creamy and oozy cheese with a rich buttery yellow centre. This is how we like it!
Nashua Washed Rind
Nashua Washed Rind is a washed rind soft cheese crafted from cow milk, similar in shape and size to a camembert, but more bold and brave with it's tasty, yeasty outer! When young, the paste has a chalky texture which matures into a very creamy and soft cheese with a buttery yellow centre.
Blue Cow is a surface ripened cow milk cheese with characteristic blue veins throughout. The rind is soft and the intensity of colour and flavour increases with age. For a softer texture, stronger flavour with fruity notes, we recommend you wait as long as you can to resist this one. As Kerry says, the second mouse gets the cheese!
Monte Nardi is a hard cow milk cheese that pays tribute to the early Italian settlers of the Northern Rivers region; it is Australia’s first truly regional cheese. Italian settlers began arriving at the beginning of last century from the Venuto region and surrounds of northern Italy, bringing their local farmhouse cheese making skills with them. Over a period of time reaching out and learning from the generations before them, Nimbin Valley crafted the Monte Nardi to perfection!

The Nitty Gritty
If you would like us to delay your pack, please let us know. We only send on Monday and Tuesday so that our Cheese Packs are delivered prior to the weekend, so they avoid being held up somewhere. Not cool.
We send all parcels the fastest way possible. Cost of delivery/shipping is $15 and this will be added to your order on checkout. 90% of our cheese packs arrive Wednesdays or Thursdays, while the others may take another day - and will arrive Fridays. Every pack is wrapped in a special wool blanket to insulate it as well as being packed with gel ice packs. This keeps it fresh in its wondrous journey to you.
Each piece of cheese is 150-200g, but sizes may vary as all cheeses are handmade and hand-cut.
