In Australia, we think of a business as old if it's been around longer than 20years. But in this case, Sevenhill was established more than 170 years ago! Establishing the first winery in the Clare, their commitment to creating wines that showcase the best of the region have remained.
The Sevenhill Winemakers Pack consists of four bottles that you won't be able to find in the shops. And this isn't your everyday wines. These are specially selected by Will, the winemaker, best show off his skills and Sevenhill.
2020 St Francis Xavier Single-Vineyard Riesling
Coming from the tiny 1978 planted Weikart Vineyard, the fruit from this less than an acre plot was chosen for its outstanding fruit to meet the premium nature of this wine. Two years of poor rains resulted in very low yields. However ripening was perfect and hand-picked on 20 February 2020.
2018 St Ignatius Cabernet Sauvignon Blend
Blends, in the right hands, can be heavenly. Bringing together the differing qualities of Cabernet Sauvignon, Merlot, Malbec and Cabernet Franc has created a wine of great complexity. These varieties suit Sevenhill's cooler climate and later-ripening. The 2018 vintage started on 27 February 2018 and was wrapped up on 10 April. Very dry conditions and cool nights have ensured a gentle development of fruit to produce an optimum wine experience.
2019 Inigo Grenache
Picked from vines that are now more than 100 years old, the fruit picked from these old "warrior" vines continue to produce a brilliant wine. The full-flavoured fruit continues to create Grenache to sit and enjoy. Due to a stretch of 8 days over 35c, sugar levels in the fruit were quickly reached resulting in frantic picking to ensure the best ripeness. The first pick was on 26 February 2019 with the last of the fruit rolling in through the winery doors on 19 March 2019.
Brother John May Reserve Release Shiraz
Some things are best left to last. This wine is the pinnacle of what Sevenhill is about. Named after the last Jesuit Priest winemaker, Brother John May, this wine is steeped in sentiment, passion and history. Brother John May is famous in the Clare region, having served as winemaker from 1972 to 2003 and still shares his advice to ensure Sevenhill will forever be at the forefront of Australian quality. Picked from a small block that was planted by Br May in his early days at Sevenhill, the low yield and ultra-high quality have created a masterpiece. Plenty of rain in Winter and Spring 2016 looked promising, however, a cool January slowed ripening right down and pushed out harvesting significantly. A burst of hot weather, late in February 2017 pushed things along for a March pick early one morning in the cool. Matured in new French oak Hogsheads for 18months, this is the ultimate prize wine.
