Luckily for you, we have the tough job of pairing our monthly selection of cheeses with some of this country's best wines. We have to work our way through thousands of combinations to arrive at what we call the Perfect Pair. Try this with this month's Therapy Box or Globetrotter Pack cheese packs.
This month we have chosen four wines that will work across all four cheeses and suit the start of Autumn. We aren't going to be hard and tell you it needs to be paired exactly in a particular way. Rather, explore the flavours of the cheeses and wines and see what you like best. Naturally we have only selected brilliance. Let us know how we went!

NV Great Scott Sparkling Shiraz One of the rarest wines produced from the Eden Valley region, the Sparkling Shiraz was created as a tribute to a great man, Scott Pollock, father of two of the Brockenchack grand children. Sparkling Shiraz is a unique wine that Australians can be proud of. This is certainly no exception and has proven very popular among our Cheese Therapy customers!
2020 St Francis Xavier Single-Vineyard Riesling
Sevenhill, Clare, SA
Coming from the tiny 1978 planted Weikart Vineyard, the fruit from this less than an acre plot was chosen for its outstanding fruit to meet the premium nature of this wine. Two years of poor rains resulted in very low yields. However ripening was perfect and hand-picked on 20 February 2020.
2016 Art Collection Merlot
There is a long history of merlot making in Jo Irvine's family. Her father, James, was known as the "Master Merlot Maker". Jo followed her dad around the winery, helping make his long line of merlots from the young age of seven. A few decades later and this drop is picking up some big awards! Try this with all cheeses and you decide what you like best.
2016 Mosaic Collection Sorter Pinot Gris
This is a real treat! Jo Irvine completely blew the budget to make this one by buying some of the finest French oak barrels. We're so glad she did because they result is bang-on brilliant. Spending 12months on lees and then 14months in new and second-use French oak barrels before release, this wine is luxury, texture and fullness all rolled up into convenient little sips. Each this with pears and blue cheese and you won't go wrong.
