Burrata with savoury granola it will convert you 

It may take a moment for you to wrap your head around the concept of savoury granola. But once you try this crunchy, zingy recipe with the freshest, creamy Burrata you'll be a convert!

INGREDIENTS 
Burrata 2, drained
Lemon 1, zested and ½ juice
Extra-virgin olive oil
Rocket a handful balsamic vinegar 1 tbsp
Granola 
Oats 100g 
Pumpkin seeds 2 tbsp
Blanched hazelnuts 50g
Sesame seeds 1 tbsp
Cumin seeds 2 tsp
Coriander seeds 2 tsp
Smoked paprika 1 tsp
Dried chilli flakes ½ tsp
Runny honey 1 tbsp
Soy sauce 1 tbsp
Egg white 1
METHOD
Granola
Heat the oven to 180C/fan 160C/gas 4.

 

Put all of the granola ingredients into a bowl and toss together.

 

Tip onto a baking- paper-lined tray and cook for 25 minutes or until browned, stirring and moving the edges into the middle halfway through cooking.

 

Cool slightly.

 

 

To serve 

Put a burrata on each plate, sprinkle with the lemon zest and drizzle really well with olive oil.
Tip a handful of granola over each and serve with the rocket, dressed in the balsamic vinegar and lemon juice.
This makes more granola than you’ll need, but stored in an airtight container it will keep for a week.
